Mai Tia Sorbet Pie

 Made with store bought ingredients this pie comes together quick and easy  !! 

        Refrigerated Pie Crust (1)
       2 C  mango sorbet (softened)
        2 C   coconut  sorbet
        2 containers of Pine colada yogurt
         1/4 C Rum

  Bake pie crust in oven at 450 degrees for 9 minutes. Let Cool completely. 
  Mix all ingredients and Spoon into Crust. Freeze until firm ( 3 hours) 
 Before Serving bring to room temperature . Garnish with mango slices.

  Mai Tia Day 

1/2 C  Pineapple juice
1/2 C peach passion fruit nectar
1/2 C Guava nectar
6 T dark rum
1/4 C sugar.
4 tsp grenadine
1 tsp fresh lime juice
 4 fresh pineapple wedges 
Combine all ingredients No except wedges and stir until sugar melts. Transfer 

You can transfer to ice cream maker and follow manufacturer direction to make sorbet. . About 2 hours in freezer, 

No ice cream freezer : Mix 1/2 C water into mixture to make Granita. Freeze in a bowl whisking about every 3 hours, While need to freeze about 6 hours - then with a fork scrape surface and place crystales into frozen glasses to serve.

Waffle iron Recipes *

 Do you use your Waffle iron for other things than Waffles? 

Waffle Iron Day : 

2 C flour 
11/2 C milk
3 tsp baking powder
2 Eggs 
1 tsp Salt
1/2 C melted butter

Stir dry ingredients. Beat egg yolks,add milk,flour ,melted butter and beaten egg whites. 

Egg Omelet in Waffle Iron : 

Just like any omelet, all you really need to make this breakfast work is eggs and milk. The more veggies you add, though, the healthier it gets. The omelet cooks up perfectly in a waffle maker—just make sure to dice up your vegetables pretty small so they fit in the cracks.

Waffle Hash Browns : 

1 russet potato, peeled
salt and pepper
Using a box grater (on the large holes) or food processor, grate the potato, and place in a bowl of cold water. Let sit for about 10 minutes, while you heat up your waffle iron.
Working with a handful of potato at a time (about 1/2 cup, packed), place in the center of a tea towel and twist and squeeze to remove as much water as possible.
When the iron is heated, brush a little butter into the center (a silicone brush is handy for this). Place your potato shreds in the center; sprinkle with a little salt and pepper. Close the iron and cook till golden brown (about 10 minutes on my iron, on the highest setting; times may vary).
Using a thin spatula, gently transfer your hash brown to a serving plate – repeat with remaining potato.
Top as desired; serve immediately.

Flag cake

Wave your flag for the 4 th of July with this recipe from 2002 from cool whip and jello.

2 pt strawberries
11/2 c boiling water
1 pkg 8 oz red flavor jello
1 c cold water
1 pound cake sliced in 10 slices
11/3 c blueberries
1 tub of cool whip topping thawed

Make gelatin and put in refrigerator.
Line a 12 x 8 in pan with cake. Stir strawberries ( 1 cup) and blueberries(1cup) into gelatin. Spoon over cake.
Refrigerate  for 4 hours. Spread cool whip over gelatin. Decorate with blueberry and strawberries to make flag design. In picture.  Lisa

Bomb Pop Cocktail

 Having a 4th of July Celebration ? 

   Bomb Pop Martini : 

 1/2  ounce of grenadine
 2 ounces of lemonade
 1 ounce blue curacao 
 1 ounce vodka

  1. First pour grenadine in bottom of martini or margarita glass.
  2. Layer lemonade over the grenadine, pouring slowly or using spoon so that the liquids do not mix.
  3. In mixing tin, add ice, blue caracao and vodka. Give it a few shakes, and slowly layer over lemonade.


Home made Bomb Pop Recipe

       Perfect for July 4th Celebration : 

     Home made Bomb Pops :

Sugar water -
3 C water
1 C water

    Red Layer
1 C sugar water
1/4 C cherry soda

Blue Layer
11/4 C sugar water 
1 tsp  raspberry extract
3 drops blue food coloring

White Layer: 
3/4 C  Sugar water
3/4 C coconut milk
1/4 tsp coconut flavoring 

  • Place water and sugar in a saucepan over medium-high heat. Stir until sugar has completely dissolved. Set aside and let cool.
In your mold you need to place red layer 1/3 way full freeze 2 hours. Make white layer fill 1/3 way (freeze) & make Red layer and freeze.

National Orange Blossom Day * Lets Celebrate


   National Orange Blossom Day  Recipe : 

The orange blossom has stood for purity, chastity, and innocence dating back to ancient China. In China an emblem of the orange blossom was placed on the gowns of young brides to represent these virtues. This tradition moved westward into India and up to Persia which is present day Iran., The Orange blossom is the fragrant flower of the Citrus sinensis (orange tree).

Today's  Recipe is for Orange Pecan Balls :

1/2 C butter (softened)
 1 small can frozen orange juice concentrate 
 1 box powder sugar
 1 box vanilla wafers ( crushed)
 1 C pecans ( chopped) 

Combine : butter,sugar,crushed wafers & orange juice - Mix well.Roll into 3/4 inch balls -then roll balls into chopped pecans. Refrigerate until ready to serve,   

Orange Blossom Cocktail Recipe
  1. Frost the glass rim with bar sugar and put it in freezer to chill.
  2. Take cocktail shaker2/3 filled with ice. Add first five ingredients in it and shake well.
  3. Strain and pour chilled mixed drink in chilled cocktail glass.
  4. Garnish with orange wedge and serve.

Easy Ice Cream Cake


 Getting ready for a Summer Celebration? 

 24 Oreo cookies divided
 2 C  Strawberry ice cream ( softened)
 2 C  Chocolate ice cream ( softened)
 2 C thawed Cook Whip topping (divided)
 2 Tablespoon  Hot Fudge topping

  • Line 9-inch round pan with plastic wrap, with ends extending over side of pan. Stand 14 cookies around edge of pan. Crush remaining cookies. Reserve 1/2 cup crumbs for later use; sprinkle remaining crumbs onto bottom of pan. Spread strawberry ice cream over crumbs; top with 1 cup COOL WHIP and reserved crumbs. Cover with chocolate ice cream.
  • Freeze 4 hours.
  • Remove dessert from freezer 10 min. before serving. Use plastic wrap handles to lift dessert from pan. Carefully peel off plastic wrap; place dessert on serving plate. Let stand at room temperature to soften slightly. Top with remaining COOL WHIP; drizzle with fudge topping.

Happy Birthday with Pistachio Cake

 Pistachio's Cake  Recipe:

    • 3/4 cup unsalted shelled pistachios (approximately 4 ounces; not dyed red)
    • 1 cup all-purpose flour
    • 2 teaspoons baking powder
    • 1 teaspoon ground cardamom
    • 1/4 teaspoon salt
    • 1/2 cup whole milk
    • 1/4 teaspoon pure vanilla extract
    • 1/2 cup (1 stick) unsalted butter, softened
    • 1 cup sugar
    • 3 large eggs
    • 2 tablespoons finely grated orange zest (from 3 medium oranges)

    1. Using food processor, pulse pistachios until finely ground, about 40 seconds. (Do not overprocess, or mixture will become paste.) Add flour, baking powder, cardamom, and salt and pulse briefly to combine.
    2. In small bowl, combine milk and vanilla.
    3. In large bowl using electric mixer at moderate speed, beat together butter and sugar until light and fluffy, 1 1/2 to 2 minutes. Add eggs 1 at a time, beating well after each addition. Reduce speed to low and add pistachio and milk mixtures alternately in batches, beginning and ending with pistachio mixture and beating after each addition just until combined. Add orange zest and beat just until combined.
    4. Spread batter evenly in pan and bake until wooden skewer inserted in center of cake comes out clean, 30 to 40 minutes. Cool in pan on rack 10 minutes, then run knife around cake to loosen and invert onto rack. Remove paper and serve warm or at room temperature with vanilla ice cream or whipped cream.

Chocolate Pudding Day

 1 Chocolate Cookie bought  pie  shell 
 1 pkg chocolate Instant pudding
 1 1/2 C cold milk
 1 1/2 C thawed Cool Whip ( divided) 

* You can make the crust by crushing chocolate cookies & mix with 1/4 C melted butter and then press into a pie pan. 

  • Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in 1 cup Cool Whip; spoon into crust.
  • Refrigerate  until firm & Serve with the rest of the Cool Whip

Hope : June

     End of June : 

June is about done with. And it was all we Hoped for. As half way through the year : we did college orientation, fathers day, card challenge and a new driver in the family. 
Can't wait to see what July brings.

Grilled Catfish 2 ways

 Happy Catfish Day ! 

 Today it's grilled catfish - can be done inside in a black skillet or outside on the grill 

  On the grill : 
 Fish filet,2 T olive oil,2 T bbq rub/Seasoning & your choice of bbq sauce if desired. 

  1. You can cook this in a pan on the stove, or on the grill. We used a flat griddle side burner on our gas grill. All instructions are specifically for this. Cooking times would vary slightly based on your method of cooking.)
  2. Heat grill to medium high. Coat lightly with oil.
  3. Wash and pat dry fish filets. Rub with oil, and coat on both sides with your favorite bbq dry rub seasoning mix.
  4. Place filets on the grill / griddle and cook for approximately 3-5 minutes. Turn and cook another 3-5 minutes. Brush the top of the cooked side with bbq sauce while the other side is cooking.
  5. Flip and brush the other side with bbq sauce.
  6. Remove from heat, cover and let rest 5 minutes. Serve warm with your favorite sides. We recommend our Spicy Jamaican Slaw or a salad.

   Catfish  grilled on the Stove : 

4 Catfish filet
1/4 C flour
1/4 C cornmeal
1/2 teaspoon of various dry Seasoning ( Cajun Seasoning blend)
1/4 C butter

  • In a large resealable bag, combine the first nine ingredients. Add catfish, one fillet at a time, and shake to coat.
  • Place a large cast-iron skillet on a grill rack over medium-hot heat. Melt butter in the skillet; add catfish. Grill, covered, for 5-10 minutes on each side or until fish flakes easily with a fork.

Louisiana Catfish Courtbouillon

Today is Catfish Day !  And i live in Catfish town on the banks of the  atchafalaya basin.

Let's Share this classic Louisiana dish :

 Fresh catfish / cut in chunks
 1 large onion /chopped
 1 C onion tops /chopped
 1/2 C parsley /chopped
 1 can of tomato soup
 1 tbsp Flour
 1 tbsp oil
 1 can Water
 Dry seasoning : garlic powder, cloves,red & black powder & salt

In a pot place -oil ,catfish ,seasoning ,onion,onion tops and parsley. Pour in can of tomato sauce and water. Mix and cook on Medium heat . Cover with a lid & stir gently. Dish is cook when the onions are cooked. About 30 minutes.

Serve with white Rice and Crusty French Bread !

My take on the challenge is the vertical design of the bookcase & the bright colors. I found this vertical stamp & colored the blocks surrounding it in bright colors like the bookcase.   Add the stamp title and side flowers for a cute Hello card. Lisa

Maple Pecan Pralines Recipe

        Today I am doing Praline with a Twist :

 2 C Sugar
 1 C dark brown sugar
 3 T white corn Syrup
  1 C whipping cream
 Pinch of salt
 3 T maple flavoring
3 C pecans 

Cook : sugars,syrp,cream & salt to a soft Boil(235 degrees) . Remove from heat . Add maple flavoring & pecans. Stir until Creamy. Drop onto wax paper to cool & harden. 

Orange -Pecan Pralines Recipe

Happy Pralines Day : 

Today I am doing some with a Twist -
 2 C sugar
 1 T grated orange peel
1 C milk
1/4 C orange juice
1 1/2 C pecan halves

Combine : sugar,orange peel and Milk to a Boil Cook until soft boil (20 minutes) Stir in orange juice - Let Cool. Add pecans -Stir & drop by spoonful onto Wax paper to firm up.

National Pink Day * Celebrating with Pink Cards

It's Saturday and National Pink Day ! 

 National Pink Day is observed annually on June 23rd. Thisday is set aside for the color pink and all it represents. First used as a color name in the late 17th century, pink is a pale red color which got its name from a flower of same name.

  Today I am celebrating by showing off some of my favorite Pink Cards. Have an exciting day!!

Pecan Sandies recipe

     Pecan Sandies Day !! 

1/3 C finely chopped pecans
1 C Butter  soften
1/2 C   sugar
2 1/2 C  flour
1 teaspoon of vanilla

Directions : 

  • To toast pecans, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. Remove from heat; cool.
  • In large bowl, beat butter and sugar with electric mixer on medium speed until fluffy. Gradually add flour, beating just until blended. Stir in toasted pecans and vanilla.
  • Divide dough in half; shape each portion into 2 (1 1/4-inch-thick) logs (about 12 inches long). Wrap in cooking parchment paper; refrigerate 1 hour or until firm.
  • Heat oven to 325°F. Line cookie sheets with cooking parchment paper. Unwrap dough; cut into 1/4-inch slices. On cookie sheets, place slices 1/2 inch apart.
  • Bake 18 to 20 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheets to cooling racks.

Onion Rings Recipe

Ready for a Summer time favorite ? Try a batch of these Onion Rings. 

 Fried Onion Rings 

1 extra large Spanish onion
 1 C flour
 1 t  salt
 1 T  Cajun Seasoning 
3  C milk
2 eggs well beaten
1 T vegetable oil

Frying Oil: 

Peel onion & slice into 1/4 inch rings. Place in large bowl & cover with milk. Let sit for at least 30 minutes & drawn all but 2/3 C milk. Mix all the other ingredients into saved milk which will make you batter. Dip rings individual in batter & fry until golden brown . About 3-5 minutes a side. Drain before serving. 

Pate a Choux recipe * Eclair's and Cream Puffs

 Today is National Eclair Day !!

 I am a big fan of  Great British Baking Show from PBS .   One of there themes is always ,making : 

Pate a Choux

  • 1 cup water
  • 1/2 cup (8 tablespoons) unsalted butter
  • 3/8 teaspoon salt
  • 1 1/4 cups Flour 
  • 4 large eggs
  1. Directions : 
  2. Preheat the oven to 425°F. Lightly grease (or line with parchment) two baking sheets.
  3. Combine the water, butter, and salt in a medium-sized saucepan, heat until the butter has melted, and bring to a rolling boil.
  4. Remove the pan from the heat, and add the flour all at once, stirring vigorously.
  5. Return the pan to the burner and cook over medium heat, stirring all the while, until the mixture smooths out and follows the spoon around the pan; this should take less than a minute.
  6. Remove the pan from the heat, and let the mixture cool for 5 to 10 minutes. It'll still feel hot, but you should be able to hold a finger in it for a few seconds. 
  7. Transfer the mixture to a mixer, and beat in the eggs one at a time; it'll look curdled at first, but when you add the last egg it should become smooth. Beat for at least 2 minutes after adding the last egg.
  8. Using a generously filled tablespoon cookie scoop, or a level muffin scoop, drop the thick batter onto the prepared baking sheets in 3- to 4-tablespoon mounds. Space the mounds about 3" apart, to allow for expansion. For éclairs, pipe the batter into 5" logs about 1/2" to 3/4" in diameter.
  9. Bake the pastries for 15 minutes, then reduce the oven temperature to 350°F and bake for an additional 25 minutes, until pastries are a medium golden brown. Don't open the oven door while the pastries are baking.
  10. With this dough you can make cream puffs or eclairs  . Depending on shape & fillings the choice is yours. Lisa

Fun in the Sun : Beach ball digital page

 Thursday Digital page is a little Fun in the Sun on this rainy day . Kit is from My Memories  store.

The kit is called : 

Bouncin Beach Balls Mini Kit    By : Let Me Scrap. 

I downloaded the kit & used it with My Memory software. The only thing I added was a round shape & text that came with the kit. We are not really beach people -so I was thrilled with the clip art that came with the kit. A fun & Easy kit that came together fairly quickly. But I am still a newbie - so baby steps for me.   Lisa

Peaches and Cream Crochet Yarn Pattern

Perfect Quick Pot holder : H8/5mm Hook  and Peaches and Cream cotton Yarn.

Row 1: sc in 2nd ch from hook and sc in each ch across. Ch 1, turn

Row 2: sc in 1st sc, *hdc in next sc, sl st in next sc*, repeat * to * across, sc in last sc, ch 1 turn

Row 3: sc in 1st sc, *hdc in next sl st, sl st in next hdc*, repeat * to * across, sc in last sc, ch 1, turn

Repeat rows 2 and 3 until piece is square. Make two and then using a steel yarn needle and the same yarn used for making them, combine them using an overcasting stitch.

Peaches & Cream Muffins

 Peaches & Cream Muffin

1 Egg
1/2 C milk
1/4 C vegetable oil
1 1/2 C flour
1/2 C sugar
2 t baking powder
1/2 t salt
1 C fresh or frozen (thawed) peaches  -chopped

In a bowl add wet & dry ingredients and stir till moistened. Add peaches.
 Fill paper lined Muffin Tins -3/4 full with batter 
Cook at 400 degrees for 20=25 minutes. Then Cool

Ice cream Soda Day

The diffrence between : Milkshake,Soda or Malt ?

  A milkshake is basically smoothy ice cream. A malt has malt flavoring added to it.. An ice cream soda is a shake with some sort of soda added.

Ice Cream Soda :

3/4 C chocolate syrup
1 C milk
4 C carbonated water (chilled)
8 scoops of chocolate ice cream
Serve with wiped cream topping

For each glass - 3 T syrup, 1/4 C milk ,1 C carbonated water -stir until foamy. Add two scoops of icecream & top with whipped cream.

Perfect Vanilla Milkshake

 Today's Recipe is perfect for Summer : 

 Vanilla  Milkshake Day

4 C (good quality Ice cream)
2 teaspoon vanilla extract
8  T  sugar
2 C Milk  ( less makes for thicker shake)

 * This recipe has just a few ingredients so use the best you can afford or find.

    Lasagna * Garfield Day

      Happy Garfield Day !! And his favorite food Lasagna : 

       Speedy Lasagna

    clove garlic
    pound ground beef 
    teaspoon Italian seasoning
    cup spaghetti sauce
    purchased precooked or oven-ready lasagna noodles (each about 7x3 inches)
    container (12 ounces) reduced-fat cottage cheese (1 1/2 cups)
    cup shredded mozzarella cheese (4 ounces)
    tablespoons grated Parmesan cheese

    • 1
      Heat the oven to 400°. Peel and finely chop the garlic. Cook the beef and garlic in the skillet over medium heat about 5 minutes, stirring occasionally, until the beef is brown; drain.
    • 2
      Stir the Italian seasoning and spaghetti sauce into the beef. Spread 1/4 cup of the beef mixture in the ungreased square pan.
    • 3
      Top with 2 noodles, placing them so they do not overlap or touch the sides of the pan because they will expand as they bake. Spread about 1/2 cup of the remaining beef mixture over the noodles.
    • 4
      Spread about 1/2 cup of the cottage cheese over the beef mixture. Sprinkle with about 1/3 cup of the mozzarella cheese.
    • 5
      Repeat layering twice more, beginning with 2 more noodles and following directions in steps 3 and 4 Sprinkle with the parmesan cheese.

      Cover with aluminum foil and bake 30 minutes. Carefully remove the foil, and continue baking about 10 minutes longer or until lasagna is bubbly around the edges and looks very hot. Let stand 10 minutes, so the lasagna will become easier to cut and serve.
