Easy Strawberry Short Cake Recipe

 What is a shortcake ? 

Shortcake is typically made with floursugar, baking powder or soda, salt, butter,milk or cream, and sometimes eggs. The dry ingredients are blended, and then the butter is cut in until the mixture resembles cornmeal.

Is British in Origin: 

The large amount of butter is what makes shortbread short: the term short, when applied to biscuits and pastry, means crumbly, like shortcrust pastry should be. It is the reason why the fat added to biscuits and pastries is called shortening. :Lisa 

  • 2 cups flour
  • 1/4 cup sugar, divided
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cut into small cubes
  • 1 cup whole milk
  • 2 pints strawberries, hulled and sliced
  • 2 cups heavy cream
  • 2 teaspoons vanilla extract
  • 2 tablespoon powdered sugar 

  • Preheat the oven to 425 degrees.
  • Add the flour, 2 tablespoons sugar baking powder, salt and butter into a food processor and pulse until the butter is in pea sized crumbles.
  • Add in the milk, pulsing until the dough comes together.
  • Using a tablespoon  add the shortcake dough onto a greased  sheet pan .
  • Bake for 12-15 minutes.
  • While the biscuits are baking, add the remaining two tablespoons of sugar to the bowl with the strawberries and stir together.
  • In a medium sized bowl add the heavy cream and beat with  until soft peaks form.
  • Add in the vanilla extract and powdered sugar and whip for an additional 15-20 seconds until stiff peaks form.
  • Once the biscuits are cooled, split them in half, top with strawberries and whipped cream  then top with the biscuit top.
