Don't have time for a pie - this is a cook and easy pudding that can be used multi ways * How Creative Can you be?
Strawberry Rhubarb Pudding
3 C of sliced rhubarb
2 C sliced Strawberries
2 C water
1 C sugar
1/4 C cornstarch & ( few drops of red food coloring)
In sauce pan cook rhubarb & strawberries until mushy (10 min) . Combine sugar & cornstarch and add to mixture. Cook until thick & Transparent.
You can eat it alone or use it as a topper on ice cream , or pound-cake . Or make it a part of a desert like a crisp. Lisa
