Today's Recipe : Easy Corn Fritters

 Let's Celebrate Corn Fritter Day!!! 

What  are the differences in Hushpuppies, Beignets andFrittersHushpuppies are the easiest since they are just a dollop of deep fried cornmeal dough, similar to corn bread usually made with cornmeal in a course texture. ... So a fritter is lots of filling and some batter. This easy version is made like pancakes so enjoy! 

  • 3 cups corn kernels *  you can use frozen or fresh 
  • 1 cup all-purpose flour
  • 1 Tablespoon sugar
  • 1 teaspoon baking powder
  • 2 large eggs, lightly beaten
  • 3/4 cup heavy cream
  • Vegetable oil, for frying


In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.. Then stir in eggs,and cream.
Using a large skillet -place oil in the pan and scoop fritter  batter onto pan. (Like pancakes ) cook on each side 2-3 minutes until golden brown. Transfer to a paper lines plate and season.
