Cranberry White Chocolate Macadamia Nut Cookies

3 1/2 tablespoons *  unsalted butter, at room temperature
1/2 cup sugar
1/2 cup  brown sugar
1/2 teaspoon salt
1 teaspoon vanilla essence
1 egg
1 cup  all-purpose flour
1/2 tsp baking soda
1/2 cup  dried cranberries
1 cup  macadamias, halved
1 cup  white chocolate chips

Preheat oven  345 degrees line 2  cookie sheets with parchment paper. 

 In a bowl, place the butter and beat until light and Add the sugars, salt and vanilla essence and beat to combine. Add the egg and stir to combine. Add the flour, bicarbonate soda, dried cranberries, macadamias and white chocolate chips and stir to combine. Roll spoonful of dough into balls and place on sheet trays - flatten and bake.  Bake for 10-15 minutes until golden brown.
