Day of the Dead Card


Day of the Dead ! 

Today starts the Mexican celebration for the Day of the Dead - celebrated throughout Mexico, in particular the Central and South regions, and by people of Mexican heritage elsewhere. The multi-day holiday focuses on gatherings of family and friends to pray for and remember friends and family members who have died, and help support their spiritual journey.

Halloween Allergy Free Treats












  • 1 cup Biscoff creamy cookie spread
  • 1/2 cup corn syrup
  • 3 cups Rice Krispies
  • 32 milk chocolate kisses ( nut Free facilities) 
In a large saucepan, combine cookie spread and corn syrup. Cook and stir over low heat until blended. Remove from heat; stir in Rice Krispies until coated. Shape level tablespoons of mixture into balls; place onto waxed paper. Immediately press a kiss into center of each cookie. Let stand until set.


  • 8 ounces semisweet chocolate, chopped
  • 2 cups miniature marshmallows
  • Black or red shoestring licorice
  • 24 small round candy-coated milk chocolate balls (such as Hersheys or Sixlets)

Easy Candy Corn Bark

 Its National Candy Corn Day !! 


     Oct 30 th is the perfect time to make this for Halloween tomorrow : 




vanilla-flavored candy coating (almond bark), chopped  ( 24 oz) 
cups broken thin pretzel sticks   ( 2 Cups) 
 cups candy corn    ( 21/2 Cups) 



  • Spray 15x10x1-inch pan with cooking spray. Line pan with waxed paper.
  • In large microwavable bowl, microwave candy coating on High 1 minute 15 seconds; stir. Continue microwaving and stirring in 15-second intervals until melted and smooth. Stir in pretzels and 2 cups of the candy corn. Spread mixture evenly in pan. Sprinkle remaining 1/2 cup candy corn evenly over top; press in lightly.
  • Let stand 1 hour or until completely cooled and set. Break into irregular 2- to 3-inch pieces. Store covered at room temperature.

  • Use canned Salmon (pulse fine in food processor)
  • Place in a mixing bowl with  1 Egg and enough ( 1 Cup)  Flour to make a dough that holds together and roll out.
  • Cut into bite size pieces (use pizza cutter)  or roll them in small balls . 
  • Bake 350 for about 20 minutes 
  • You can add catnip or other flavors your cat likes 

I make a bunch of these and put in containers for Christmas gifts  for pet lovers with cats. Lisa

It's Chocolate Day ! Homemade Brownie Master Mix



Happy Chocolate Day !!! 




Homemade Brownie Mix & Recipe :  Makes a great holiday gift also. Lisa 




  • 4 C Flour
  • 1 T plus 1 tsp baking powder
  • 1 T salt
  • 81/2 C Sugar
  • 21/2 C Cocoa
  • 2 C shortening 
Combine first 5 ingredients and cut in shortening. Sore in air tight container for up to 6 weeks. 

  • 3  C Brownie Mix
  • 3 Eggs beaten
  • 11/2 tsp vanilla extract 
  • 1/2 C chopped pecans 
Mix together and placed in greased 8 by 8 pan. Bake at 350 for 35 to 4o minutes,

National Black Cat Day. Celebrated on October 27th, just four days before Halloween, National Black Cat Day is a holiday which celebrates an animal which has sort of an image problem.

Slow Cooked Apple and Steel Cut Oats











  • 2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)
  • 1-1/2 cups  milk (or substitute non-diary alternative like almond milk)
  • 1-1/2 cups water
  • 1 cup uncooked steel-cut oats
  • 2 tablespoons brown sugar (or substitute maple syrup or other desired sweetener)
  • 1-1/2 tablespoons butter, cut into 5-6 pieces (optional)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray. Add all ingredients (except optional toppings) to slow cooker. Stir, cover, and cook on low for approx. 7 hours (slow cooker times can vary).
Optimal toppings : : chopped nuts, raisins, maple syrup, additional milk or butter

Pumpkin Bread recipe


Pumpkin Day today ! 









  • 31/2  C Flour
  • 11  tsp salt
  • 2 tsp soda
  • 1 tsp baking powder 
  • 3 C sugar
  • 2/3  C  orange juice 
  • 4 eggs
  • 2 tsp cinnamon
  • 2 tsp nutmeg 
  • 1 tsp all spice 
  • 2 C Pumpkin
  • 1 C oil
  • 1 C nuts (chopped)
  • 1 C raisins
Blend oil,sugar and eggs, Add pumpkin and dry ingredients , Pour into 2 well greased & floured loaf pans. Bake at 11/2 hours at 350 degrees .Remove from pan and let Cool .

Homemade Corn Dogs



 Greasy Food Day !   Homemade Corn Dogs 









  • 1 (12-oz.) package hot dogs
  • 1/2 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 large egg
  • 1/2 cup whole milk
  • Vegetable oil, for frying /stick for corn dogs 


In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt. In a liquid measuring cup, whisk together the egg and milk. Pour the wet ingredients into the dry ingredients and stir until combined. 
Add 4 inches of oil to a large, heavy-bottomed stock pot. Attach thermometer  and let heat until 360 degrees. Line a plate with paper towel to drain the corn dogs after frying. 
Dip each hot dog in batter and fry until golden brown ( 3 minutes) . Drain on paper towels.

Easy Orange No Bake Pie







Today we are going Orange to Stop Bullying ! 

Easy orange cream icicle pie  is for dessert : 







  • 1 9 inch graham cracker pie crust
  • 1 14 oz. can sweetened condensed milk (NOT evaporated milk)
  • 1 6 oz. can orange juice concentrate, thawed
  • 1 8 oz. container whipped topping
  • additional whipped topping for serving and Orange slices for decorations 


Mix orange juice and sweetened condensed milk together- Mix in whip topping, Place  in Pie  shell and refrigerate at least 3 hours until set . Garnish with whip cream and orange slices .

Easy Boston Cream Pie


Boston Cream Pie 













History. Owners of the Parker House Hotel in Boston claim that the Boston cream pie was first created at the hotel by renowned French chef Augustine Francois Anezin, who led the hotel's culinary staff from 1865-81. ... The Boston cream pie is the official dessert of Massachusetts, declared as such on 12 December 1996.



  • 1 yellow cake ( purchase or make with cake mix)
  • 1 pkg vanilla  instant pudding mix
  • 1 C milk
  • 1  Cook Whip thawed
  • 1 T butter
  • 1 oz Unsweetened Chocolate 
  • 3/4 C powdered sugar 

Make cake . Let Cool . Cut with knife into 2 layers. Make pudding and add Cool Whip.Spread between two layers of Cake, Melt Chocolate with butter in microwave and pour over cake. Dust with powdered sugar .

Nut Day ! Spiced Nuts

  • 1 C sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 2 T butter
  • 1/4 tsp nutmeg
  • 1 T vanilla extract
  • 2 T water
  • 1 C pecans  (toasted)
Combine ingredients( except nuts)  and Cook until forms a soft ball -Add pecans - Pour into buttered baking sheet and Cool. Break  into pieces.

Easy Pumpkin Cheesecake





     1 Ready to use graham cracker crust


  • 2 pkg cream cheese soften
  • 1/2 C sugar
  • 1/2 C pumpkin
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/2 tsp pumpkin spice mixture 
Container Cool Whip thawed


  • Heat oven to 350°F. Mix all ingredients in large bowl  and pour into pie pan. Bake for 40 minutes (until toothpick comes out clean) Let Cool and top with Cool Whip.

Happy Sweetest Day! Waffles



Happy Sweetest Day ! And I am making my hubbies favorite waffles with blueberries : 










Waffles

  • 2 cups all-purpose flour
  • 2-1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1-2/3 cups milk
  • 3 eggs, separated
  • 1/4 cup butter, melted
  • In a large bowl, combine the flour, baking powder and salt. Whisk the milk, egg yolks and butter; stir into dry ingredients just until moistened. Fold in blueberries.
  • In a small bowl, beat egg whites until stiff peaks form; fold into batter.
  • Cook by manufacturers direction
Blueberries (frozen)  cooked with 14 C OJ and 3 T honey to boil. Then add to mix a combination of (1/4 C OJ & 1 T cornstarch ) to thicken. Cook to desired consistency.

Louisiana Crab Bisque for 20












  • 6 hard crabs cleaned/cut
  • onion / chopped
  •  1 lb lump crab meat
  • 3 ribs celery chopped
  • 2 quarts half/half
  • 1 lb butter
  • 2 C flour
  • 1 1/2 gal chicken stock

Serves 20 people

In a soup pot -melt butter-add crabs ,onions,celery and cook until dry. Add flour and make roux. Add chicken stock and simmer 30 minutes. Add half/half  and  Blend together. Strain and Add lump crab meat -and Serve.   Lisa

Easy Double Chocolate Peanut Butter Cupcakes











  • 1 devil food cake mix
  • 1 31/2 oz  instant chocolate pudding 
  • 1 C peanut butter chips
  • 4 eggs
  • 1/2 C oil
  • 1 C water 
  • 1 can chocolate fudge topping
  • 1 ready to spread chocolate frosting

Make the batter and Add pudding mix in. Bake in lined Cup cake tins. Punch holes in baked cu[cakes and Add topping. Let Cool completely and Frost.

Pasta Day ! Cooking Pasta the right way !

How to Cook Pasta the right way ! Are you doing it right? 



  1. Use a large pot. Pick a roomy pot that gives the pasta plenty of space to move. ...
  2. Load up the pot with lots of water. ...
  3. Salt the water. ...
  4. Bring the water to a full, rolling boil. ...
  5. Keep stirring. ...
  6. Test the pasta two minutes before it's “ready.” ...
  7. Save a scoop of pasta water. ...
  8. Drain, stir with sauce, and enjoy.

Do I need to rinse it ?



Many people rinse their pasta after cooking it. The only thing this does is remove the starch that helps hold and absorb the sauce. You not only wash away the clinginess, but also the flavor of the pasta. When the pasta is al dente, drain it in a colander.

Pasta Do's & Don'ts




  • Cooking times can vary according to pasta shape, amount, and type (whole-wheat, gluten-free, etc.).
  • Unlike dried pasta, fresh pasta takes only two or three minutes to cook, max.
  • Stuffed pasta, like ravioli, will rise to the surface and float when ready.
  • Don't add any oil to the pasta water

Frozen Lemon ;Lime Daiquiris



     Its National Liqueur day !

   And in Louisiana that means it Daiquiris time - my lemon lime recipe below: 









  • 2 C water
  • 2 c sugar
  • 2 6 oz can frozen limeade
  • 2 6 oz  can frozen lemonade
  • 1 6 oz can frozen lemon juice
  • 1  5th Rum
  • 6 c water
  • mint for garnish
Combine water and sugar. Heat 10 minutes to make syrup. Mix all ingredients and Freeze overnight. Sppon into glasses when ready to Serve and garnish with Mint.

I Love Lucy * Chocolate Fudge






Today we celebrate the TV Show : I Love Lucy and the Chocolate Factory Episode with Mom Chocolate Fudge Recipe :



  • 2 ounces unsweetened Chocolate Squares
  • 2 C Sugar
  • 1/8 tsp salt
  • 3/4 C Milk
  • 5 T white Corn Syrup
  • 4 T butter
  • 1 C chopped pecans
  • 2 tsp vanilla
Cook first 5 ingrediants to Soft Ball (235 degrees). Remove from heat and Add butter. Cool and Beat until Stiff. Add Nuts and vanilla. Drop by spoonful on waxed paper or pour into greased pan . Cool and Cut and store.

Dessert Day * Apple Crisp









Apple Crisp

  • 2 sliced pared baking apple
  • 1/2 C brown sugar
  • 1/4 c flour
  • 1/4 C raw oatmeal
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 T soft butter

Pre heat oven 350 degrees. Place apples in greased loaf pan. Blend remaining ingredients until crumbly. Spread over apples and Bake 30 minutes until tender and golden  Serve warm

Easy 30 minute Chili





Football Season Here! How about some Easy Chili to feed the fans ! 



  • 2  lb ground meat 
  • 2 cans Diced tomatoes
  • 2 can tomato sauce
  • 1/3 C favorite Chili seasoning
  • Beans or not? 
  • 1 can black beans & 1 can red beans 
Brown beef in a Dutch oven over medium-high heat, stirring often, 4 to 5 minutes or until beef crumbles and is no longer pink; drain well. Return beef to Dutch oven; sprinkle evenly with seasoning mix, and sauté 1 minute over medium-high heat.Stir in diced tomatoes and remaining ingredients; bring to a boil over medium-high heat, stirring occasionally. Cover, reduce heat to low, and simmer, stirring occasionally, 15 minutes.

Gumbo Day in Louisiana








 It's Gumbo time in Louisiana !

  • 1/2 C oil
  • 1 C flour   ( you have to make a roux)
  • 2 onions chopped
  • 1/2 bell pepper chopped
  • 4 cloves garlic minced
  • 1 stalk celery chopped
  • 1 Chicken ( whole cut up or just pieces)
  •  1 lb  Sausage links (2 cut  bite sizes 
  • 1 Cup chicken stock
  • 1 C water 
  • 2 bay leaves
  • 1 teaspoon each of thyme/basil 
  • Season to taste 
Make your Roux with flour and oil -cook in Pot until dark brown (about 45 minutes).Add onions,pepper,celery and garlic -Cook until soft add Water and stock .And Seasoning. 
In a skillet brown chicken and sausage . -add too the pot.Cook slow for 2-3 hours =the slower and longer the better it will taste. Check the taste and adjust as needed.   Lisa

Sausage and Spinach Bread





 it's National Sausage Pizza Day ! But how about it made into a roll with spinach? 











  • 1 pkg-ed of frozen bread (thawed)
  • 1 lb loose sausage (jimmy dean)
  • 1 box frozen spinach ( thawed/ toweled dry)
  • 2 C of shredded Cheese (your choice)
  • 2 tsp of Italian dry seasoning 
  • Egg (beaten for egg wash)
Thaw bread out until doubled in size on a cookie sheet.
Cook sausage in a skillet  , Then  roll out bread  into a large rectangle. and fill with cook sausage ,then dried out spinach and sprinkle with seasoning. Layer cheese on top and roll up and close. Brush with egg wash  .  Bake at 350 for 25 minutes. Slice to serve with pizza sauce.

Smothered Pork Chops and Gravy













Pork Chops and Gravy 
  • 6 lean pork chops
  • 2 T cooking oil
  • 1 large slice Onion
  • 1/4 chopped bell pepper
  • 2 cloves of garlic  chopped
  • 1 can of beef broth
  • 2 large T flour
Season chops -in a large hot skillet with oil brown pork shops on both sides remove. Add onion,garlic and bell pepper and saute till soft. Add flour and Mix. Add in beef broth -Stir until smooth. Add back pork chops and Cover. Simmer about 30 to 40 minutes .
We serve with rice but mash potatoes works too.

Louisiana Pastalaya *










Pastalaya for a crowd : a great dish for a tail gate party or for a large crowd the perfect combination of pasta and jambalaya .  Lisa 



  • 1 small can Rotel tomato
  • 5 lb chicken   browned
  • 1 lb sausage cut in bite size 
  • 5 large onions  chopped
  • 4 cloves garlic chopped
  • 2 ounces of hot sauce
  • 4 C water to 1lb of pasta 
  • Salt,pepper and seasoning to taste
Saute vegetables until tender, Add rest of the ingredients and bring to Boil. Then lower until pasta is cooked. (25 minutes)
