Chinese New Year Fireworks

Feb 5th starts Chinese New Year ! 

        Let's Celebrate with Fireworks  for Good Luck : 

Firecrackers and fireworks are set off at the stroke of midnight to scare away evil spirits and celebrate the coming of the new year. ... On New Year's Day morning: In some places, families first set off firecrackers when they open the door or before they go out. It symbolizes good luck throughout the whole year.

My son lighting fireworks to celebrate the season ! We live in the country so we save them for Christmas/ New Year to use for Chinese New Year. Please be careful and obey all local laws.  Lisa Jung 

Easy Egg Drop Soup

Easy Egg Drop  Soup ! 

We are getting ready for Chinese New Year at my house which is Feb 5th ! So I though I would share this easy recipe" Lisa 

  • 3 C chicken broth
  • 1 T cornstarch
  • 2 T cold water
  • 1 Large egg /slightly beaten
  • 1 green onion sliced
  • In a large saucepan, bring broth to a boil over medium heat. Combine cornstarch and water until smooth; gradually stir into broth. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Reduce heat. Drizzle beaten egg into hot broth, stirring constantly. Remove from the heat; stir in onion.

Mondays Recipe : Shrimp and Okra Gumbo

It's Gumbo time in Louisiana : 

  • 2 T bacon fat
  • 2 C chopped okra
  • 2 onions chopped
  • 6 green onions chopped
  • 2 lbs shrimp
  • 1/2 can tomatoes sauce
  • 2 pods red pepper
  • 2 pods garlic
  • 1 green pepper chopped
  • 1 bay leaf
  • 8 C water
  • 1 teaspoon salt
In a large pot smother: okra,green peppers in bacon fat. Add tomato sauce -The add water and rest of ingredients except Shrimp. Cook too Boiling -cook 10 minutes. Add cleaned Shrimp and Cover. Cook 20 minutes and serve with white rice.

Irish Coffee recipes with and without whiskey

National Irish Coffee Day ! 

  • 6 oz freshly brewed Coffee
  • 1 tsp granulated Sugar
  • 1 tsp brown Sugar
  • 1 1/2 ounces of Irish whiskey
  • Fresh whipped cream 
Preheat your mug. Fill cup with  3/4 of coffee-Add both sugars and stir. Add whisky (substitute) Top with whipped cream. 

Substitutes: blended whiskey OR sour-mash whiskey (This has a milder flavor.) OR Scotch (especially for sipping) OR cognac (especially for cooking) OR rum OR Substitute one part vanilla extract plus two parts water for each tablespoon of bourbon.

Irish coffee day !

From Jameson Whiskey

  • 1/3 parts Demerara and Muscovado sugar syrup
  • 1 part Jameson
  • 1 part lightly whipped double cream
  • 3 parts medium roasted espresso coffee
  • 1 vanilla pod or cinnamon for garnish
  • Fresh grated nutmeg
  • Dissolve 2 parts Demerara sugar and 1 part Muscovado sugar in 3 parts of boiling water for the syrup.
  • Stir sugar syrup into Jameson in a warmed glass.
  • Whip chilled double cream lightly until it starts to stiffen.
  • Brew a shot of coffee into the glass from your espresso machine.
  • Reload and brew in a second shot.
  • Pour the whipped cream into the coffee over the back of a spoon so it floats on top.
  • Garnish with a trimmed vanilla pod or a stick of cinnamon and dust with a grating of fresh nutmeg.

Hershey Bar Pie

 Happy Pie Day !

  • 18 large marshmallows
  • 1/2 C milk
  • 6 Hershey bars
  • 1/2 pt whipping cream 
  • 1/2 C pecan
  • pinch salt
  • One pre baked pie shell 

Melt in a double boiler -marshmallows,milk,Hershey bars and salt. Cool and fold in whipping cream. Pour into  pre baked pie shell. Sprinkle pecans on top and refrigerate until set. 

Serve with whipped cream and chocolate sprinkles.

Winter Snow

Home made Granola recipe

 Its Granola Bar day !

So today I am sharing my family favorite granola mix: 
  • 2 C oatmeal
  • 1/2 C wheat germ
  • 1 tsp salt
  • 1/4 C oil ( your choice)
  • 1 C coconut
  • 1 1/2 C Nuts 
  • 1 Can  Eagle brand milk
  • 11/2 C raisins
Combine all ingredients except raisins. Place on 2 lined cookie sheets (parchment paper) and Bake until toasty brown. Stirring as needed. Remove from oven and Add Raisins. 

Kitchen Tip: make this basic recipe your own by using your favorite dried fruits and Nuts that your family enjoy.  Lisa

It means listen, do not make noise, be calm, and pay attention. There is a verse in the Bible that says “Be still and know that I am God.” That means stop paying attention to what is going on in the world, and listen to what the Bible is telling you. Chocolate Oatmeal Drop Cookies

January is Oatmeal month : 

Chocolate Oatmeal Cookies 


  • 1/3 C Coca
  • 1/2 C whole milk
  • 1/2 C crunchy peanut butter
  • 2 1/2 C quick Oats
  • 2 C sugar
  • 1 stick oleo
  • 1 tsp vanilla
In a pot combine : coca,sugar,milk and oleo. Bring to Boil  for 1 1.2 minutes. Remove from Heat - Add peanut butter,vanilla and Oats. Drop by spoonful onto wax paper and let set up. 

What is Oleo ?  In my household that's what Grandma always called  the Margarine  . And you can still find it used in older cookbooks and recipes : 

The original name for margarine was oleomargarine. It used to be called just oleo. Then at some point, it changed to just being called margarine. The popularity ofoleo/margarine grew during war time because of the shortage of butter.

Tomato Basil Soup :

Tomato Basil Soup : 

  • 3 T butter
  • 1/4 C chopped onions
  • 1/4 C chopped green onions
  • 1 tsp chopped garlic
  • 3 T flour
  • 28 oz crushed tomatoes
  • 1 C milk
  • 1 1/2 C half/half
  • 1/2 C shredded basil leaves
Melt butter - saute onions and garlic. Add flour and stir. Add all other ingrediants and Simmer for at least 30 minutes, 

Want to make it vegan - substitute potatoes (cooked /blended ) for smooth texture. You can also add carrots for extra flavor. Lisa

FEAR THOU NOT – This verse is so simple in its meaning, and it offers great comfort to those going through difficult times 
FOR I AM WITH THEE – This is the reason why we should not be afraid. God was their protector (and He is certainly ours 
 WILL UPHOLD THEE WITH THE RIGHT HAND OF MY RIGHTEOUSNESS – The right hand speaks of strength (most people are right-handed).

National Law Enforcement Day !

Today I am sharing my police officer card I made using a digital stamp from Check out there Profession stamps for more great stamps. 

  • Using red,white and blue printed paper for base.
  • Blue solid rectangle for middle
  • Stamp and quote - Colored with markers 

Our local police officers during Community Service. Local Christmas parade - they always start the parade out leading the way !

Happy National Tempura Day !

Happy National Tempura Day ! 

1 cup of flour
1 tablespoon cornstarch
1 1/2 cups of seltzer water
  1. Combine all ingredients. Use as batter for meats and vegetables.

Traditional Japaneses Batter: 

1 C flour 
1 egg
cold water 

Add egg and water together mix and gradually add in flour .

But he said to me, “My grace is sufficient for you, for my power is made perfect in weakness. Therefore I will boast all the more gladly about my weaknesses, so that Christ’s power may rest on me.

 Grace is something we do not deserve but receive in ways that are abundantly freeing. When we give someone grace who needs to be forgiven, we forgive them. When we offer grace to someone who can never pay us back, it is real.

Perfect Whipped Cream

National Whipped Cream Day !!

  • 1 cup heavy whipping cream
  • 2 T of  Sugar 
  • Place a metal mixing bowl and metal whisk into the freezer for 10 to 15 minutes.
    • Place the sugar into the mixing bowl and add the whipping cream. Whisk just until the cream reaches stiff peaks. Store any unused portion in an airtight container for up to 10 hours. When ready to use, rewhisk for 10 to 15 seconds.

What's a Recipe challenge & how do I do one ? 

It's simple - I give you a list of items ( Recipe)and you build the layout using the items requested. The next few post will go through the recipe as  I build my layout for the challenge - 

Step #1 : 

 Recipe  -Use 3 Papers 

I used from the included paper pack (3) papers. 
  • Background paper
  • Bottom border (check) 
  • Right edge paper (floral) 

Now I am building mine on my Memories software but you can use other things. I dropped in background first - then C hosing Photo I dropped in the next two peppers.  Paper done !

Crab and Mushroom Quiche :

Crab and Mushroom Quiche : 

  • 2 unbaked pie shells
  • 1 C shredded mozzarella cheese
  • 1 C mushroom  sauteed in butter
  • 1 LB Crab meat 
  • 4 Eggs beaten
  • 2 C half/half
  • 1/2 C minced onion 
  • 1 tsp salt 
  • 1/2 tsp pepper
Drain crabmeat -add cheese and mushroom together and place in bottom of pie shells. In a bowl mix Eggs,half/half,onion and seasoning. Pour egg mixture over Crab meat in pie shells, Bale at 400 for 15 minutes then lower to 300 for 30 minutes until done, Let stand 20=25 minutes until serving.  

This Quiche is perfect for a lady's brunch or  a Sunday dinner.  Perfect with a side salad  this is quick and easy to make. Lisa 

Kitchen Tips : 

You can place albumin foil around crust edges to keep from burning. 

Test center of quiche - The Knife Test :  for doneness with a thin-bladed knife. Insert knife about 1 inch from the center of a one-dish quiche; midway between center and edge of cups. If knife is clean when pulled out, the quiche is done. If any quiche clings to the blade, bake a few minutes longer and test again

Cant get Crab Meat - you can substitute  other seafood or meat, Lisa
