Endangered Birds of Louisiana :

Earth Day 2019   This year's Earth Day is dedicated to protecting millions of plant and animal species from going extinct, according to the Earth Day Network. The rapid rate of extinction Earth is experiencing today is a direct result of human activity, according to the organization

The brown pelican is a North American bird of the pelican family, Pelecanidae. It is one of three pelican species found in the Americas and one of two that feed by diving in water

Allen's hummingbird is a species of hummingbird. It is a small bird, with mature adults reaching only 3 to 3.5 in in length. The male has a green back and forehead, with rust-colored flanks, rump, and tail. The male's throat is an iridescent orange-red

Happy Earth Day

Happy Earth Day!

Earth Day 2019 is an event observed annually on April 22. It is a day held to demonstrate and promote environmental awareness and calls for the protection of our planet. Today, Earth Day2019 is celebrated in more than 193 countries each year.

Earth Day Network is asking people to join our Protect our Species campaign. Our goals are to:
  • Educate and raise awareness about the accelerating rate of extinction of millions of species and the causes and consequences of this phenomenon.
  • Achieve major policy victories that protect broad groups of species as well as individual species and their habitats.
  • Build and activate a global movement that embraces nature and its values.
  • Encourage individual actions such as adopting plant based diet and stopping pesticide and herbicide use.

Peanut Butter and Jelly Bars

  • Nonstick vegetable oil spray
  • 1 1/2 cups unbleached all purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 cup smooth peanut butter
  • 3/4 cup (packed) golden brown sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup grape jelly or other jelly or jam
  • 2/3 cup coarsely chopped salted dry-roasted peanuts

  • Preheat oven to 350°F. Line 8x8x2-inch metal baking pan with heavy-duty foil, leaving 2-inch overhang around edges and pressing firmly into corners and up sides of pan. Coat foil with nonstick spray. Whisk flour, baking powder, and 1/4 teaspoon salt in small bowl. Using electric mixer, beat peanut butter, sugar, and butter in large bowl until smooth. Add egg and vanilla; beat on low speed until smooth. Add flour mixture; beat on low speed just to blend. Transfer half of dough to prepared pan (about scant 1 1/2 cups). Place remaining dough in freezer for 10 minutes. Using fingertips, press dough evenly onto bottom of pan. Spread jelly over in even layer. Remove dough from freezer; using fingertips, break into grape-size pieces and scatter over jelly layer. Sprinkle chopped nuts over.
  • Bake bars until top is golden brown, about 30 minutes. Cool bars completely in pan on rack.

Sourdough Bread Day!!!

  1. In a very large bowl, mix starter, water and 3 cups of whole wheat flour with a wooden spoon and combine well.
  2. Add salt and remaining flour ½ cup at a time, attempting to completely stir in the flour with each addition. When you can no longer mix with a spoon, use your hands to mix in the flour. Continue adding flour until your dough begins to resemble dough, but is still sticky and "pourable."
  3. Pour dough into large loaf pans and fill ⅓ way up. Cover with a towel and allow to sit in a warm place for 4-12 hours, until the dough is at least doubled in size and looks to be "domed" on top.
  4. Place loaves in a cold oven and turn the oven on to 350 degrees. Bake bread for 50-60 minutes, until the edges are golden and the bottom sounds hollow when tapped.
  5. Remove to cool on wire racks for at least 30 minutes. Makes 2-3 loaves, depending on the amount of flour used and size of loaf pans.

All sourdough start with a starter - you can make your own or purchase many kinds at the super market or on line or better yet from a friend that willing to share .....

In early California, sourdough was as much a part of the Goldrush of 1849 as gold itself. Traveling throughout the West in the packs of miners and settlers, it eventually found its home in San Francisco. The air in the Golden Gate region enhanced the bread made there with a wonderfully distinct taste. San Francisco has become world renowned for sourdough bread. In the United States, and even in areas around the world, San Francisco sourdough is regarded as the benchmark by which all other sourdough breads are judged.
Goldrush has removed the mystery of creating time honored sourdough! Buy this sourdough starter to easily create the tangy flavor and hearty aroma of sourdough bread anywhere in the world! Goldrush Sourdough Starter is naturally produced with only "wild yeast" and no fillers or preservatives. Works well in bread machines, too. Easy-to-follow instructions are included.
