  • 1 Yellow Onion, Diced
  • 2 tbsp Olive Oil
  • 2 Garlic Cloves
  • 28 oz Can of Corn, drained
  • 28 oz Can of Black Beans, Rinsed and Drained
  • 28 oz Can of Diced Tomatoes
  • 1 Packet Ranch Dressing Seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Cumin
  • 2 tbsp Chili Powder
  • 1 tsp Cilantro
  • 2 lb Ground Beef, Turkey or Venison
  1. n a large saucepan, heat olive oil and saute garlic and onion together.
  2. Add ground beef and brown until cooked through.
  3. Drain beef mixture and add to slow cooker.
  4. Add corn, black beans, and diced tomatoes to slow cooker.
  5. Add salt, pepper, cumin, chili powder, cilantro, and ranch dressing packet. Stir together until mixed well.
  6. Heat on low setting for 4-6 hours.
  7. Serve with cheese, sour cream, avocado, and tortilla chips.
I am all about fix it and forget it meals. Which leaves time for me to craft so look for weekly recipes to make and enjoy!   Lisa
